Rice with Greens and Minced Beef

500g minced beef

2 tbsp oil 1 large onion, chopped

1 1/2 tbsp grated garlic

1 1/2 tbsp grated ginger

1 tsp salt

1 tsp finely chopped cayenne pepper

3/4 tsp freshly-ground black pepper

200g tinned, diced, tomatoes (with juice)

500g coarsely-chopped mixed greens (kale or collard greens, spinach and watercress)

300g rice

1.6l water



Paneer Makhani

250g paneer 2.5cm cubes, fried

5 large tomatoes, blanched and pureed

3 T cashews

1 C milk

1/2 C fresh cream

1/2 C water


For tempering

2 t oil

2 T ghee

1/2 t cumin seeds


For seasoning

1 t garlic paste

1 t ginger paste

1 T kasoori methi

2 t coriander powder

1/2 t garam masala

1/2 t red chili powder

1 t ketchup

salt to taste
